Shrimp Casserole
- 1/2 c. margarine (1 stick)
- 1 c. chopped onion
- 1 c. chopped green pepper
- 1 c. chopped celery
- 4 c. cooked shrimp, shelled and deveined
- 1 can cream of mushroom soup
- 1 can Cheddar cheese soup
- 1 c. chopped pimentos (with juice)
- 1 c. green onion tops
- 3/4 tsp. pepper
- 1/3 c. chopped parsley
- 1 Tbsp. picante sauce
- 1 tsp. salt
- 2 c. cooked rice
- bread crumbs and butter for topping
- Saute onion, green pepper and celery in margarine. Combine remainder of ingredients, except for topping and mix well.
- Spoon into a 13 x 9-inch baking dish. Sprinkle with bread and dot with margarine. Bake at 350u0b0 for 30 minutes.
- If mixed ahead of time and refrigerated, increase baking time to 10 to 15 minutes. Extra rice and grated cheese may be added.
