Tuscan Chicken With Mediterranean Salsa
- 14 1/2 ounces petite diced tomatoes drained
- 3 tablespoons capers
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 2 teaspoons mccormick basil leaves
- 1 teaspoon oregano leaves McCormick(R)
- 1/8 teaspoon mccormick red pepper, crushed
- 1 teaspoon italian seasoning McCormick(R) Perfect Pinch(R)
- 1 teaspoon McCormick(R) California Style Garlic Pepper with Red Bell and Black Pepper
- 1/2 teaspoon mustard McCormick(R), Ground
- 1 1/2 pounds boneless skinless chicken breast halves
- For the Salsa, mix all ingredients in medium bowl. Cover. Refrigerate until ready to serve.
- For the Chicken, mix Italian seasoning, garlic pepper and mustard in shallow dish. Rub seasonings onto chicken to coat evenly.
- Coat large nonstick skillet with no stick cooking spray. Heat pan over medium heat. Cook chicken 5 to 7 minutes per side or until cooked through. Serve chicken with Salsa.
