Tropical Chicken Salad

  1. Start off by cutting your red bell pepper and mango into bite-sized pieces. If you're using frozen corn kernels, zap them in the microwave for 10-15 seconds.
  2. Heat your stove top heating surface to medium, and spray your pan with canola oil cooking spray. Start off by grilling your pineapple rings for 2-3 minutes and place to the side. Cook chicken breasts for about 10-12 minutes, flipping occasionally. Cut the chicken into bite-sized pieces and place to the side.
  3. Place your romaine lettuce in a bowl and top with sweet corn, red bell peppers, mango chunks, pineapple rings, and chicken.
  4. Pour mango chipotle dressing on top and take a step into tropical paradise.
