Tropical Chicken Salad
- 6 ounces grilled chicken breast
- 2 pineapple rings Dole
- 1/4 cup mango diced
- 1/4 cup red bell pepper sliced
- 1/4 cup sweet corn
- 3 cups romaine lettuce
- 3 tablespoons dressing Kraft mango chipotle
- Start off by cutting your red bell pepper and mango into bite-sized pieces. If you're using frozen corn kernels, zap them in the microwave for 10-15 seconds.
- Heat your stove top heating surface to medium, and spray your pan with canola oil cooking spray. Start off by grilling your pineapple rings for 2-3 minutes and place to the side. Cook chicken breasts for about 10-12 minutes, flipping occasionally. Cut the chicken into bite-sized pieces and place to the side.
- Place your romaine lettuce in a bowl and top with sweet corn, red bell peppers, mango chunks, pineapple rings, and chicken.
- Pour mango chipotle dressing on top and take a step into tropical paradise.
