Seafood Casserole
- 3/4 stick margarine, melted
- 1/2 c. green bell pepper
- 1/2 c. chopped onion
- 1 tsp. chopped celery
- 1 cloves (toe) garlic
- 1 c. chopped onion (green)
- parsley according to taste
- 1 lb. crayfish tails, crabmeat or shrimp
- 1 small can mushrooms
- 1 can cream of mushroom soup
- 2 c. cooked rice
- 1/2 c. sour cream
- 1 c. shredded Monterey Jack cheese
- 1 c. shredded Cheddar cheese
- Saute bell pepper, onion, celery, garlic, onion and parsley in margarine until translucent.
- Add crayfish, crabmeat or shrimp; cook 5 minutes.
- Add mushrooms, soup, rice and sour cream.
- Mix well.
- Pour in greased casserole and bake at 350u0b0 for 45 minutes. Add cheeses on top last 15 minutes of baking.
