Tomato Garlic Crostini
- 4 tablespoons extra-virgin olive oil
- 4 garlic cloves minced
- 2 plum tomatoes chopped
- 1 teaspoon sugar
- 1 teaspoon thyme
- kosher salt to taste
- 8 slices baguette cut diagonally into 1/4 inch
- peppercorn to taste
- 3 parsley leaves chopped
- 1 teaspoon white wine vinegar
- In a mixing bowl add chopped tomatoes , vinegar ,sugar ,thyme and parsley .Mix well.Season with salt and pepper.
- Heat 2 tablespoon olive oil in a pan and add garlic.Stir and cook until a little burnt or brown in color.nemove garlic from oil and add another 2 tablespoon of oil in the pan.
- Arrange slices of bread on the pan and toast them till nice golden and crispy.
- Top the toasted bread with the tomato garlic mixture.nerve immediately.
