Pumpkin Spice Cake
- 4 eggs
- 1 1/2 cups sugar
- 11/16 cup olive oil
- 1 5/8 cups pumpkin boiled and drained
- 4 cups flour
- 2 teaspoons yeast
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 3 1/2 tablespoons butter
- 6 2/3 tablespoons powdered sugar
- 7/8 cup cream cheese
- 1 pinch cinnamon
- ground almonds or hazelnuts, optional
- For the cake, preheat oven to 250 degrees 250u0b0C (approximately 480u0b0F).
- Beat eggs with sugar until foamy.
- Add oil and pumpkin and continue mixing.
- Add sifted flour, baking powder, baking soda, salt and spices to egg mixture and mix well.
- Pour batter into prepared baking dish and bake for 25-30 minutes.
- Let cake cool completely before frosting.
- For the frosting, beat butter with powdered sugar until fluffy.
- Add cream cheese and a pinch of cinnamon and mix on low speed until frosting is smooth and creamy.
- Spread frosting over cake.
- If desired, garnish with caramelized almonds.
