Awesome Pumpkin Cake / Loaf
- 1 cup pumpkin puree 240-265 g
- 2 cups almond flour 224 g
- 1 1/4 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 tablespoon pumpkin pie spice
- 1/4 cup melted butter 56 g
- 2/3 cup Swerve or sugar equivalent
- 1/2 teaspoon stevia glycerite
- 3 large eggs
- 1 teaspoon vanilla extract
- Preheat oven to 325-350F and grease a 9 round cake pan or a 9x5 loaf pan. Line bottoms with parchment paper and grease the parchment.
- In a medium bowl, whick together the almond flour, baking powder, and spices.
- In a large bowl beat butter, Swerve and pumpkin until smooth. Beat in eggs, vanilla extract, and stevia glycerite.
- Beat almond flour mixture (your batter should be thick, but if it's really stiff and hard to beat, add a tbps or so of almond milk) and taste it, if you think it's not sweet enough, add 1 tbsp of Swerve.
- Bake for 40 minutes or until edges are browned and a tester inserted in the center comes out clean.
- Let cool in pan for 20 minutes, then flip onto wire racks to cool completely.
