Green Sushi With Fresh Goat Cheese
- 1 cucumber
- 1 fresh goat cheese
- 2 tablespoons sour cream
- Hawaii black salt or coarse salt
- hazelnut oil
- chives finely chopped
- Wash the cucumber. Using a paring knife, cut thin strips lengthwise until you reach the cucumber seeds and then do it again on the other side.
- In a bowl, combine the goat cheese, 2 tablespoons of sour cream, chives, a pinch of salt and a little pepper. Lay two cucumber strips in a cross on a flar surface and place a small spoonful of the goat cheese mixture at one end (the goat cheese should not overlap when the cucumber is rolled). Fold and roll the cucumbers over so that the goat cheese is completely encased in the cucumbers. Drizzle with a thread of hazelnut oil and sprinkle with coarse salt. Refrigerate until ready to serve.
