Green Tea Orzo With Roasted Peppers
- 1 red bell pepper
- 1 yellow bell pepper
- 3 tablespoons olive oil
- 1 tablespoon green tea powder
- 1 onion peeled and finely chopped
- 2/3 pound orzo
- 1/3 cup white wine
- 1/2 lemon zested and juiced
- fresh thyme chopped, to garnish
- Preheat the oven to 400u0b0F. Rub the peppers with 1 tbsp oil and place on a baking tray. Roast for 25-30 mins until the skins are charred and blistered. Place the hot peppers in a plastic bag and set aside for 15 mins until cool enough to handle. Remove the skin and cut into strips, discarding the seeds and pith.
- Meanwhile, mix the green tea with 2 1/2 cups hot water. Heat the remaining oil in a wide pan and saute the onion over medium heat for 5 mins. Add the orzo and saute for 1 min then add the white wine. Simmer for 1 min then add the green tea and season. Simmer for about 15 mins until the pasta is tender then add the lemon juice and adjust the seasoning. Divide the pasta between 4 serving bowls and top with the warm peppers. Garnish with thyme and lemon zest.
