Man'Ouche (Lebanese Pizza)
- 3 3/8 tablespoons warm water
- 3 tablespoons olive oil
- 1/2 teaspoon salt
- 1 1/4 cups yogurt
- 2 9/16 cups wheat flour
- 1 teaspoon yeast dehydrated
- 1 teaspoon granulated sugar
- 3 tablespoons za'atar
- 1 tablespoon spice ground sumac
- 5 3/8 tablespoons olive oil
- If you have a bread machine, first put water, oil, salt and yogurt, then the remaining ingredients and run the "dough cycle" program.
- If you do not have a bread machine, mix the flour and salt in a large bowl.
- In a medium-sized bowl, mix the yogurt and the oil and in another bowl, the water, the yeast and the sugar.
- Make a well in the center of the flour pour the water-based mixture and then the yogurt mixture.
- Mix all the ingredients with your fingertips, then knead for 10 minutes. The dough should be soft and smooth.
- Cover the dough and let it rise for at least two hours.
- Preheat oven to 425 degrees Fahrenheit.
- Mix together all the ingredients of the filling.
- Line a baking sheet with parchment paper.
- Divide the dough into several small balls, the size of an apricot.
- Flatten each ball by hand, giving it a shape of a small pizza.
- Arrange them on the baking sheet.
- With a spoon, spread a little of the mixture for topping on each pizza. Put them in the oven for 5-10 minutes.
- The dough should not be too brown and must remain moist.
