Chocolate Nectarine Streusel Cake
- 2 1/3 cups all purpose flour
- 3/4 cup granulated sugar
- 1 cup butter + 2 tbsp
- 1/2 cup cashews
- 1 teaspoon vanilla extract
- 2 eggs
- 2 ounces dark chocolate melted
- 1 teaspoon baking powder
- 1/2 tablespoon cocoa powder
- 1/3 cup peach jam
- 3/4 pound nectarines pitted and cut into wedges
- Heat the oven to 350u0b0F. Grease a 9 1/2 inch springform pan. Place 1 3/4 cups flour, 1/2 cup sugar, 3/4 cup butter and the cashews in a food processor and pulse until crumbly. Cover and chill for 30 mins.
- Meanwhile, cream the remaining butter, sugar, vanilla extract and a pinch of salt. Add the eggs, 1 at a time, then the melted chocolate. Fold in the baking powder, cocoa powder and remaining flour. Transfer to the prepared pan and bake for 10 mins.
- Remove from the oven and spread the jam over top. Distribute the nectarine pieces and top with the cashew crumble. Bake for an additional 30-35 mins then allow to cool on a wire rack.
