Chicken Yakitori Skewers

  1. Place soy, mirin and sugar in a small saucepan on medium heat. Stir for 1-2 mins, until sugar dissolves and mixture is boiling. Reduce heat to low and simmer 2-3 mins. Reserve 1/2 for brushing.
  2. Preheat broiler. Thread chicken and vegetables alternately onto skewers. Brush with remaining sauce. Arrange on an oiled foil-lined tray.
  3. Broil skewers 8-10 mins, turning and basting with remaining sauce halfway through cooking.
  4. Serve chicken skewers with steamed rice and reserved sauce.
