Black Bean, Sweet Potato, & Sauerkraut Quesadilla
- 4 corn organic, torillas
- 1 can black beans rinsed & drained
- 2 tablespoons chopped cilantro freshly
- 1/2 lime juiced
- 1 sweet potato medium, thinly sliced
- 1/2 cup sauerkraut
- 1/4 cup shredded cheese
- 1 teaspoon grass-fed butter or coconut oil, for the pan
- Preheat over to 350 F. Thinly slice the sweet potato with a sharp knife or a mandoline. Bake for 10 minutes.
- In a medium bowl, combine black beans, cilantro, and fresh lime juice. Mix well with clean hands.
- On one tortilla, spread 1/2 of the black bean mixture.
- Top with sliced sweet potatoes, sauerkraut, and shredded cheese. Place the other tortilla on top. Repeat the same process with the second set of tortillas.
- Heat a large frying pan over medium heat. With coconut oil or butter, brown each side of the tortilla. Be careful when flipping sides, making sure the contents don't fall out.
