Noodle Frittata
- 1 pound Chinese egg noodles thin
- 1 tablespoon oil
- 1 red pepper seeded and finely chopped
- 4 green onions thinly sliced
- 1 cup bean sprouts
- 2 tablespoons chopped fresh cilantro finely
- 8 eggs
- 1 tablespoon soy sauce

- Preheat the grill to high. Cook the noodles according to the package directions; drain well.
- Heat the oil in a nonstick skillet on high heat. Add the pepper and stir-fry for 1-2 mins, until tender. Stir in the noodles, onions, bean sprouts and cilantro.
- Whisk eggs and soy sauce in a medium bowl. Reduce heat to low and pour egg mixture over the noodles. Cook for 8 mins, until almost set.
- Place the pan under the broiler for 5 mins, until set and golden. Serve in wedges with hoisin or oyster sauce and salad.
