Vegan Superfood Brownies
- 1/8 cup coconut yogurt
- 1/8 cup vegan butter
- 1 teaspoon vanilla extract
- 1 cup maple syrup
- 2 tablespoons chia seeds
- 6 tablespoons water
- 1/3 cup cocoa powder
- 3/4 cup whole wheat flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- Mix together water and chia seeds and place in fridge for 15 minutes.
- Meanwhile, preheat oven to 350 degrees and grease and flour an 8x8 baking pan.
- Place melted butter, yogurt, and maple syrup in your mixing bowl. Once your chia seed mixture has turned into a syrup mixture add it to the bow and mix together using a paddle attachment or, if working without an electric mixer just use a large spoon.
- Beat in cocoa, flour, salt and baking powder.
- Spread into prepared pan and bake in the oven for 25-30 minutes.
