Living The Gourmet Mushroom Soup

  1. In a saucepan heat the butter and olive oil and add the onions and mushrooms. Saute the mushrooms and onions until the onions turn clear.
  2. Add the parsley and celery and continue to saute for a minute or two. Add the chicken broth, lemon juice and pepper. Simmer but Do Not Boil.
  3. Place the vegetables in a blender and give a few good chops and return to the broth. If you do not want to use a blender, you can mash the veggies in the soup pot but be careful not to burn yourself.
  4. Add the cream or milk just before serving.
