Tofu Patties With Thai Salsa
- 13 1/2 ounces cannellini beans drained, rinsed
- 7 ounces firm tofu drained on paper towel
- 2 slices bread wholegrain, broken into pieces
- 1 red onion roughly chopped
- 2 tablespoons fresh mint leaves
- 1/4 cup cilantro leaves fresh
- 1 tablespoon teriyaki marinade
- 1 egg lightly beaten
- 1 clove garlic minced
- 2 tablespoons self-rising flour
- 2 tablespoons vegetable oil
- salsa Thai
- 1 persian cucumber halved, seeded, finely chopped
- 2 tablespoons cilantro leaves fresh, chopped
- 2 tablespoons lemon juice
- 1 red chili small, finely chopped
- 1 teaspoon brown sugar
- salad to serve
- In a food processor, combine cannellini beans, tofu, bread, onion, herbs, teriyaki sauce, egg and garlic. Process until smooth. Add flour and process until combined.
- Heat oil in a medium frying pan over high heat. Place egg rings in pan then spoon tofu mixture inside. Cook over medium heat for 2-3 mins per side, or until firm and golden. Drain on paper towels. Repeat with remaining tofu mixture.
- To make Thai salsa, combine all ingredients in a small bowl and toss to combine.
- Serve patties topped with Thai salsa and salad on the side.
