Cranberry Apple Muffins

  1. HEAT oven to 425u0b0F. Spray two 12-muffin pans with no-stick cooking spray.
  2. COMBINE shortening, brown sugar and eggs in medium bowl; beat at medium speed of electric mixer until light and fluffy.
  3. WHISK together flour, baking powder, cinnamon and salt in small bowl. Add to shortening mixture. Add milk, apple and cranberries; stir just until blended.
  4. SPOON batter into muffin tins to three-quarters full. Sprinkle with coarse sugar and chopped nuts.
  5. BAKE 15 minutes or until toothpick inserted in center comes out clean. Cool 2 minutes in muffin pan. Serve warm.
