Spicy Spanish Meatballs
- 2/3 pound ground beef
- 1 egg yolk
- 2 tablespoons breadcrumbs
- 2 onions small, finely diced
- 2 garlic cloves finely diced
- 1 chili finely sliced
- 2 tablespoons sunflower oil
- 2 tablespoons olive oil
- 2 tomatoes ripe, chopped
- 1/2 lemon
- 3 tablespoons chopped parsley finely
- Place the ground beef, egg yolk, breadcrumbs, half the onion, half the garlic and half the chili in a mixing bowl and mix until fully combined. Form the mixture into 15 small meatballs.
- Heat the sunflower oil in a frying pan, add the meatballs and fry for 5-8 mins.
- Meanwhile, heat the olive oil in a saucepan, add the remaining onions and saute for 1-2 mins. Add the garlic and chilli and saute for a further 30 seconds- 1 min. Stir in the tomatoes and lemon juice then add the meatballs and simmer for 3-5 mins. Transfer to serving bowls and sprinkle with parsley. Serve.
