Chopped Chicken Livers

  1. Wash livers and drain.
  2. Heat chicken fat and saute 2 large chopped onions and chopped garlic just until brown and soft.
  3. Add chicken livers; lower heat and cook until well done, but still soft.
  4. Set to the side and cool 30 minutes or longer.
  5. Put livers and boiled eggs through a meat grinder.
  6. Be sure to add all the drippings through the grinder.
  7. In a large bowl, put the liver mix; add salt, pepper, sugar and the small chopped onion.
  8. Form into a ball and roll in fresh parsley.
  9. Best if made at least 1 day ahead to season.
  10. Serve with crackers.
