Salmon Tagliatelle
- 7 1/2 ounces salmon Canned Alaska, pink or red
- 1 2/3 cups canned tomatoes chopped
- 2 1/16 cups pepper Canned pimento, chopped
- 1 chilli peppers Fresh, de-seeded, chopped
- 2 teaspoons pepper Paprika
- 1 onion small, finely chopped
- 1 courgette diced
- 1 lemon juiced
- 1 teaspoon coriander Freshly chopped
- salt
- black pepper
- 6 1/8 ounces dried tagliatelle or Fresh
- 1 2/3 tablespoons creamed coconut
- flaked coconut to garnish
- Drain the can of salmon, break the fish into pieces, set aside. Put tomatoes, chillies, pimento pepper, paprika, onion, courgette, lemon juice and coriander into a saucepan. Bring to boil. Simmer for 5 minutes, season.
- Cook pasta. Add salmon and creamed coconut to sauce. Heat gently, for 2-3 minutes. Stir lightly. Spoon over drained pasta. Garnish.
