Vegan Cherry Brownies
- 4 3/4 cups plain flour
- 2 1/16 cups caster sugar
- 1 1/8 cups cocoa powder plus extra for dusting
- 2 teaspoons vanilla extract
- 2 teaspoons baking powder
- 2 teaspoons bicarbonate of soda
- 1 cup soya milk
- 1 cup sunflower oil
- 1 cup maple syrup
- 2 cans cherries 425g each, in syrup, drained and syrup reserved
- 1 3/16 cups dark chocolate vegan, finely chopped
- cream Whipped soya, to serve
- Preheat the oven to 350u0b0F. Grease a 12 x 8 inch baking tray. In a bowl, mix the flour, sugar, cocoa powder, vanilla extract, baking powder and baking soda. In a separate bowl, mix the soy milk, oil, maple syrup and 3/4 cup cherry syrup.
- Gradually beat the liquid mixture into the dry mixture with the whisk of a mixer. Stir in the cherries and chocolate. Spoon into the tray and smooth out. Bake for 30 minutes, until a skewer comes out clean.
- Allow to cool. Cut into 56 squares and dust with cocoa powder. Serve with whipped soy cream.
