Gluten And Dairy Free Taco Soup
- 1 pound ground beef Or Turkey
- 2 tablespoons olive oil
- 1 whole onion
- 1/2 whole green bell pepper
- 1 clove garlic
- 3/4 teaspoon salt
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon oregano
- 1/4 teaspoon sugar
- 1 cup water
- 2 cups frozen corn
- 1 can kidney beans Pinto Or
- 4 ounces chopped green chilies weight
- 2 cans diced tomatoes
- Chop up the onion and green bell pepper.
- Heat about 2 Tbsp olive oil over medium high heat. Brown the beef, onion, and bell pepper. Drain off fat.
- Stir in the garlic, salt, cumin, paprika, oregano, sugar, and water. Taste and adjust seasonings to your liking. Bring to a boil.
- Add in remaining ingredients and bring to a boil
- Reduce heat, cover and simmer at least 30 minutes. Viola! Dinner in a snap.
