Blueberries & Mashed Persimmons Flavored With Vanilla

  1. In a bowl, mix the flour and salt. Set aside.
  2. In another bowl, cream the butter and sugar with an electric mixer.
  3. Add the egg yolks, whisk them until the dough becomes smooth.
  4. Using a wooden spoon, incorporate the dry ingredients-the result will be grainy.
  5. With your fingertips press the dough into small individual pie molds.
  6. Bake for about 10 to 12 minutes, until the pastry is golden. Let it cool down.
  7. Mix the mashed persimmons and ground vanilla.
  8. Finely chop the almonds and add them to the mixture.
  9. Place the puree in the pies and garnish with fruit.
