Chicken Pie
- 10 chicken breasts, skinned
- 3 c. water
- 1 Tbsp. salt
- 1 tsp. whole allspice
- 1 tsp. whole peppercorns
- 2 bay leaves
- 3 carrots, peeled and sliced
- 2 onions, skinned and quartered
- 2 sticks celery, sliced
- 5 sprigs parsley
- 4 oz. sliced ham
- 2 hard-boiled eggs
- 1 oz. butter
- 1 oz. flour
- 2 to 3 Tbsp. sherry
- 1 Tbsp. lemon juice
- 1 tsp. sugar
- pinch of ground mace
- pinch of pepper
- 1 egg yolk
- 1 pkg. Japanese frozen puff pastry
- egg (to glaze)
- This delicious pie can be prepared early in the day, kept in a cool place and baked just before it is required.
