Maple Coconut & Mixed Berry Greek Yogurt Parfait
- 1 cup greek yogurt
- 4 strawberries fresh
- 3/4 cup fresh blueberries
- 1/2 kiwi fresh
- 1/4 cup coconut flakes Toasted
- 1/2 teaspoon lemon rind
- 2 tablespoons maple syrup add more if desired sweeter
- Start your oven (I have a small toaster oven) and toast the Coconut flakes till they're nice and golden brown 2 to 3 minutes at 350 degrees. Transfer to the fridge for 15 minutes to cool down. The coconut flakes toasts in no time! So be careful and keep an eye or better yet, set a time for 2 minutes to check on them.
- Whip the yogurt a bit so it becomes a bit more luscious and creamier. Fold in the lemon rind, and top all the fruit.
- Bring out the coconut flakes and sprinkle over the fruit and pour in the maple syrup!
- And just like that breakfast is ready!
