Coconut Carrot Cake: Gf & Paleo

  1. DRY in a large bow: combine almond flour, salt, baking soda, cinnamon and nutmeg
  2. WET in a separate bowl: mix together eggs, agave and oil
  3. ADD to WET: carrots, raisins and walnuts
  4. Stir WET with DRY.
  5. Place batter into 2 well greased, round 9-Inch cake pans
  6. Bake at 177 degrees for 35 minutes
  7. Whip cream till desired thickness.
  8. Cool to room temperature and spread with cream.
