Coconut Carrot Cake: Gf & Paleo
- 1 cup coconut flour Crede Oils, sieved
- 1 teaspoon salt Himalayan crystal
- 1 pinch baking soda
- 1 tablespoon ground cinnamon
- 1 teaspoon ground nutmeg
- 5 large eggs
- 1/2 cup honey or agave nectar
- 1/4 cup grapeseed oil or palm shortening
- 3 cups carrots grated
- 1 cup raisins
- 1 cup walnuts
- 250 milliliters cream
- DRY in a large bow: combine almond flour, salt, baking soda, cinnamon and nutmeg
- WET in a separate bowl: mix together eggs, agave and oil
- ADD to WET: carrots, raisins and walnuts
- Stir WET with DRY.
- Place batter into 2 well greased, round 9-Inch cake pans
- Bake at 177 degrees for 35 minutes
- Whip cream till desired thickness.
- Cool to room temperature and spread with cream.
