Pear, Potato And Bacon Bake
- 2 1/4 pounds potatoes peeled
- 2 slices bacon chopped
- 2 tablespoons butter
- 3 tablespoons flour
- 1 cup vegetable stock
- 1 cup milk
- grated nutmeg Freshly, to taste
- 1 leek thinly sliced
- 1 pear cored and cut into 8 wedges
- 3/4 cup gouda cheese grated
- Cook the potatoes in boiling salted water for 20 mins. Drain and cool.
- Preheat the oven to 325u0b0F. Grease a 9-inch round or square baking dish. Fry the bacon in a small skillet until crispy. Drain on paper towels.
- Melt the butter in a medium saucepan on medium heat. Add the flour and cook, stirring, for 2 mins. Add the stock and milk. Bring to a boil. Reduce heat to low and simmer, stirring constantly, for 5 mins. Season with salt, black pepper and nutmeg.
- Slice the potatoes. Layer potatoes and leeks in the prepared dish, drizzling some sauce between each layer. Arrange the pear and bacon on top. Drizzle with the remaining sauce. Sprinkle with the cheese.
- Bake for 30 mins or until the cheese is golden. Serve hot.
