Mexican-Style Lasagna
- 2 tablespoons promise buttery spread
- 2 zucchini large, chopped
- 1 white onion small, finely chopped
- 1 clove garlic finely chopped
- 1 pound ground beef
- 1 teaspoon dri oregano leaves, crush
- 1/2 teaspoon ground chipotle chile pepper
- 1 cup frozen whole kernel corn
- 8 ounces tomato sauce
- 2 cups shredded cheddar cheese
- 2 tomatoes medium, seeded and chopped
- 9 corn tortillas
- Preheat oven to 350u0b0.
- Melt Promise(R) Buttery Spread in 4-quart saucepot over medium-high heat and cook zucchini and onion, stirring occasionally, 4 minutes or until tender. Add garlic and cook 30 seconds.
- Layer 3 tortillas in 11 x 7-inch baking dish, cutting to fit. Layer 1/2 of the sirloin mixture and 3/4 cup cheese over tortillas. Repeat layers, ending with tortillas. Top with remaining 1/2 cup cheese.
- Stir in ground sirloin, oregano and chipotle and brown, stirring occasionally. Stir in corn and tomato sauce and simmer 5 minutes or until thickened.
- Bake covered 30 minutes Remove cover, then top with tomatoes. Let stand 5 minutes before serving. Serve, if desired, with fat free sour cream.
