Vegan Apple Loaf
- 2 apples Empires or similar
- 1 1/2 cups all purpose flour
- 1 cup white sugar
- 1/4 cup corn meal
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 1 teaspoon vanilla
- 2 tablespoons cinnamon
- 1/2 cup apple sauce sugar free, or apple spread
- 1 teaspoon white vinegar
- 1 cup water
- Heat oven to 325 degrees Fahrenheit.
- Grease or spray with cooking spray one 9 X 5 loaf pan.
- Finely chop apples.
- Sift together dry ingredients.
- Toss apples in dry ingredients.
- Add the wet ingredients.
- Mix together until smooth.
- Pour into pan and bake for 50 minutes to one hour until a stick inserted into the center does not have batter on it when removed.
- Allow to cool for at least 20 minutes before cutting and serving.
- If serving for dessert, top with a scoop of vanilla ice cream and drizzle warmed butterscotch sauce (about one tbs.) over the top
