Almond And Cherry Cake
- 1 cup butter or margarine
- 3/4 cup sugar
- 1/2 teaspoon vanilla extract
- 3 eggs
- 1 cup ground almonds
- 2 1/4 cups all purpose flour
- 2 teaspoons baking powder
- 1 cup Amaretti Cookies coarsely chopped
- 5 tablespoons milk
- 13 1/2 ounces cherries in syrup, drained
- 3/4 cup powdered sugar
- 1/2 lemon juiced
- 1/2 teaspoon red food coloring
- chocolate hearts, for decoration
- Preheat oven to 400u0b0F. Grease and flour a 9 x 5 inch loaf pan. Cream butter, sugar and vanilla extract until light and fluffy. Add eggs, 1 by 1, then add almonds, flour, baking powder and crushed cookies, alternating with milk. Fold cherries into batter then transfer to prepared pan. Bake for about 1 hour. Remove from oven and allow to cool on a wire rack for about 10 mins. Meanwhile, mix powdered sugar with lemon juice and food coloring. Remove cake from pan and spread pink icing over top. Decorate with chocolate hearts.
