Round-Up Casserole
- 3/4 c. uncooked rice
- 1 1/2 tsp. salt
- 1 tsp. black pepper
- 2 (8 oz.) cans tomato sauce
- 1 c. hot water
- 1 c. chopped onion
- 1/2 c. chopped green pepper
- 1 lb. ground round
- 1 tsp. salt
- 1 (12 oz.) can whole kernel corn, drained
- 3 tsp. chili powder
- 4 slices bacon
- In ungreased 2-quart casserole, place layer of rice.
- Sprinkle with 1 1/2 teaspoons salt and pepper.
- Pour in 1 can tomato sauce and hot water.
- Add layers of onion and green pepper, then a layer of ground beef.
- Sprinkle with 1 teaspoon salt.
- Top with layer of corn.
- Add chili powder to last can of tomato sauce; pour over corn.
- Top with bacon slices.
- Cover; bake for 1 hour.
- Uncover; bake for 15 minutes at 375u0b0.
- This may be made in 2 dishes and freeze one for later use.
