Spiced Hazelnut Pretzel Cookies
- 3/4 cup hazelnuts chopped
- 1 3/4 cups all-purpose flour plus extra for dusting
- 1 teaspoon baking powder
- 2/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice
- 1 egg beaten
- 1/2 cup butter cut into cubes
- milk for brushing
- powdered sugar for dusting
- Mix 2/3 cup nuts, flour, baking powder, sugar, vanilla, spice mix, egg, butter and a pinch of salt. Stir with a wooden spoon to combine, then knead on a floured work surface to form a ball of dough. Wrap in plastic wrap and chill for 30 mins.
- Preheat oven to 400u0b0F. Line 2 baking sheets with parchment paper. On a lightly floured work surface, roll out dough. Using a pretzel-shaped cookie cutter, cut out 50 pretzel shapes, re-rolling the trimmings as necessary. Transfer to prepared pans, brush with milk then sprinkle with remaining nuts. Bake for 7-8 mins. Allow to cool. Dust with powdered sugar to serve.
