Chipotle Cheddar Twice Baked Sweet Potatoes

  1. Preheat over to 375 degrees F.
  2. Place sweet potatoes on sheet tray and bake for 45 minutes- 1 hour or until soft. Remove from oven and let stand until cool*.
  3. Split potatoes and remove the flesh to a medium sized bowl reserving skins. To the sweet potato flesh add 1/4 cup of cheddar, butter, sour cream, chipotle, and salt and pepper. Mash until creamy
  4. Add the fillling back to the potato skins and top with remaining cheddar.
  5. Place on a sheet tray and bake for 15 minutes or until golden brown.
  6. Serve hot, topped with chopped cilantro and green onions.
  7. * if you don't have an hour to bake your potatoes the first time, I have had a lot of success microwaving them instead. Just prick them all over with a fork to release the steam and microwave for 10 minutes for two potatoes just be really careful when you take them out and let them cool before removing the flesh
