Potato Crab Cakes
- 1 (6 oz.) box hash brown potatoes with onions
- 1 (16 oz.) container crab meat or imitation, finely chopped
- 2/3 c. mayonnaise
- 2 eggs
- 1/2 c. dry plain bread crumbs
- 1/4 c. chopped parsley
- 1/4 c. chopped red or green pepper
- 1 Tbsp. lemon juice
- 1/4 tsp. pepper
- 1/8 tsp. ground red pepper
- 1/4 c. corn oil
- Prepare potatoes according to package directions; drain and pat dry.
- Place in large bowl.
- Add all remaining ingredients except oil.
- Stir until well blended.
- Shape into 8 patties. Place on waxed paper lined tray.
- Cover and refrigerate 2 hours. In large skillet heat oil over medium heat.
- Add patties; cook until browned on both sides, about 10 minutes.
