Sausage And Tomato Pilaf
- 1 tablespoon olive oil
- 3 beef sausages thick
- 1 onion chopped
- 1 red pepper seeded, sliced
- 2 cloves garlic crushed
- 14 ounces arborio rice
- 1/4 teaspoon cayenne pepper
- 4 cups chicken stock
- 14 ounces diced tomatoes
- 14 ounces chick peas rinsed, drained
- 5 ounces frozen peas
- 1/2 ounce chopped parsley
- salad
- crusty bread
- Heat oil in a frying pan on high. Cook sausages 4-5 mins, until cooked through. Remove from pan and slice. Saute onion and pepper in same pan 2-3 mins. Stir in rice and cayenne pepper. Return sausage to pan along with half of stock. Bring to a boil. Reduce heat and simmer 3-4 mins, until liquid has been absorbed. Add tomatoes and remaining stock. Cook, uncovered, 10 mins, until liquid is absorbed and rice is tender. Add chickpeas and peas. Heat, stirring, 2 mins. Sprinkle with parsley and serve with salad and crusty bread.
