Candied Tomato, Olive, And Pine Nut Cookies
- 7 1/8 tablespoons black olives
- 6 7/16 tablespoons tomatoes candied
- 1 5/8 cups flour
- 1 teaspoon baking powder
- 5 5/8 tablespoons butter
- 2 tablespoons mascarpone cheese
- salt
- ground black pepper
- 1 egg
- 7 1/8 tablespoons pine nuts
- Preheat oven to 180 degrees Celsius.
- Cut the olives and the candied tomatoes into small cubes.
- In mixer bowl, combine the flour, baking powder, butter, mascarpone, salt, and pepper.
- Add the egg, tomatoes, olives, and pine nuts.
- Gently mix, and take small bits of dough (about 10 grams each), shape them into balls, and flatten slightly with the back of a spoon on a baking sheet.
- Bake for 15 minutes.
