Candied Tomato, Olive, And Pine Nut Cookies

  1. Preheat oven to 180 degrees Celsius.
  2. Cut the olives and the candied tomatoes into small cubes.
  3. In mixer bowl, combine the flour, baking powder, butter, mascarpone, salt, and pepper.
  4. Add the egg, tomatoes, olives, and pine nuts.
  5. Gently mix, and take small bits of dough (about 10 grams each), shape them into balls, and flatten slightly with the back of a spoon on a baking sheet.
  6. Bake for 15 minutes.
