Kimchi Pork Bao Buns With Pulled Pork And Crispy Onions
- 10 pounds pork shoulder
- 1 cup Gochujang base
- 2 ounces paprika
- 2 tablespoons chili powder
- 1 tablespoon granulated garlic
- 2 teaspoons cumin
- 2 tablespoons coriander
- 1/2 teaspoon allspice
- 3 tablespoons salt
- 1 tablespoon sugar
- 1/2 cup Gochujang base
- 2 quarts kimchi chopped
- 20 bao buns
- watercress To garnish
- 1. Mix together paprika, chili powder, garlic, cumin, coriander, allspice, salt, sugar and hot pepper paste to make dry rub.
- 2. Rub pork shoulder with dry rub, then rub with gochujang.
- 3. Roast in oven at 300u0b0F for about 41/2 hours, until tender.
- 4. When cool enough to handle, pull pork, allow to rest.
- 5. Combine the pulled pork with chopped kimchi, taste and reseason if necessary.
- 6. Steam bao buns for 5-7 minutes until they are hot and pliable.
