Festive Cranberry Orange Salsa I

  1. Start by rinsing off all produce. Next, place cranberries and coarsely chopped peppers (seeds too, unless you want milder salsa) in blender or food processor. Pulse and stir a few times until well chooped and no large chunks remain
  2. Next chop peeled oranges, tomatoes, and onions into bite sized pieces. You want them to be small enough to fit comfortably on a chip but not minced.
  3. Combine all ingredients in a large sauce pan and cook on meduim~low heat for about 20-30 minutes or until the veggies/fruit are tender.
  4. Remove from heat and place salsa in a large serving bowl, cover and chill for about two hours. Serve it up and enjoy!
