Festive Cranberry Orange Salsa I
- 2 cups fresh Cranberries
- 4 oranges peeled
- 1 large white or yellow onion
- 2-3 large jalapeno peppers seeds and all
- 3 large tomatoes
- 1 cup pineapple orange juice
- 2 cloves garlic or 1tsp powder
- 1tsp chili powder
- 1 tsp red pepperflakes
- 2 tsp salt
- 2tsp lime juice
- Start by rinsing off all produce. Next, place cranberries and coarsely chopped peppers (seeds too, unless you want milder salsa) in blender or food processor. Pulse and stir a few times until well chooped and no large chunks remain
- Next chop peeled oranges, tomatoes, and onions into bite sized pieces. You want them to be small enough to fit comfortably on a chip but not minced.
- Combine all ingredients in a large sauce pan and cook on meduim~low heat for about 20-30 minutes or until the veggies/fruit are tender.
- Remove from heat and place salsa in a large serving bowl, cover and chill for about two hours. Serve it up and enjoy!
