Cape Cake
- 1 1/4 cups sugar
- 5 eggs
- 1 lemon zest
- 6 3/4 tablespoons oil
- 1 vanilla yogurt
- 1 7/16 cups flour
- 1 1/8 cups corn starch
- 1 tablespoon baking powder
- margarine for greasing
- flour for dusting
- sugar for sprinkling
- cinnamon for sprinkling
- Grease a rectangular baking pan with butter and sprinkle with flour.
- Preheat the oven to 180 degrees Celsius.
- In a bowl, mix sugar, eggs, lemon zest, oil, and yogurt. Beat well until it becomes a smooth mixture.
- Add the flour, cornstarch, and baking powder. Beat well again.
- Place the dough in the pan, and thoroughly coat with sugar and cinnamon.
- Bake for about 45 minutes.
- Check the cooking with a toothpick, remove from the oven, unmold, and let cool.
