Chicken And Pork Soup With Dumplings
- 2 tablespoons vegetable oil
- 1 chicken breast sliced
- 3 1/2 ounces pork loin sliced
- 1 tablespoon soy sauce plus extra, to serve
- 6 cups chicken stock
- 1 bunch baby bok choy quartered
- 8 3/4 ounces dumplings frozen
- 7 ounces egg noodles cooked, drained
- 8 shrimp peeled, deveined, tails intact
- 2 ounces baby corn halved
- 2 ounces snow peas halved
- 2 ounces oyster mushrooms
- 2 green onions sliced, to serve
- Heat oil in a saucepan over high heat. Saute meat for 2-3 mins, until browned. Add soy sauce. Set aside.
- Add stock, bok choy, dumplings, noodles and shrimp. Simmer for 5 mins, until shrimp are cooked through. Add meat to soup along with remaining vegetables. Heat gently.
- Serve topped with green onions and extra soy.
