Shrimp Salad With Chili-Lime Mayonnaise
- vegetable oil for deep-frying
- 12 wonton wrappers
- 24 cooked shrimp peeled, deveined, tails intact
- 2 heads baby romaine lettuce washed and torn
- 2 cups bean sprouts
- 1 bunch fresh mint leaves picked
- lime mayonnaise Chili-
- 1/2 cup mayonnaise
- 2 kaffir lime leaves finely chopped
- 1 red chili long, deseeded, finely chopped
- 1 teaspoon fresh ginger finely grated
- 1 lime juiced
- Heat oil in a large saucepan over high heat. Working in batches, deep-fry wonton wrappers for 1 min, until golden. Drain on paper towels. Break 4 wonton wrappers into pieces.
- For the shrimp salad, combine shrimp, lettuce, bean sprouts, mint and broken wonton wrappers.
- For chili-lime mayonnaise, whisk together all ingredients and season to taste.
- To serve, place 1 unbroken wonton wrapper on each serving plate. Top with shrimp salad. Drizzle dressing over top. Serve immediately.
