Skinny Hamburger
- 1 slice bread toasted, soaked in water then excess water squeezed out
- 1 pound ground beef
- 1 egg
- 3 1/2 ounces carrots peeled, finely grated
- 1 pinch paprika
- 1 teaspoon canola oil
- 1 head romaine lettuce trimmed, sliced
- 2 radishes thinly sliced
- 2 tomatoes thinly sliced
- 4 teaspoons hot mustard
- 1/2 cucumber sliced
- 4 rolls bread halved
- ketchup
- mayonnaise
- Combine soaked bread, ground beef, egg, carrots and paprika. Season then form into 4 patties.
- Heat oil in a frying pan. Cook patties for 7-9 mins, turning.
- Meanwhile, layer remaining ingredients on bread rolls. Mix together any leftover vegetables for a salad. Top each roll with a burger. Serve with condiments.
