Crab Stuffed Avocado
- 4 ounces cream cheese softened
- 6 ounces crab meat canned, drained well
- 1/4 cup tomatoes chopped
- 1 tablespoon scallions chopped, green part only
- 1/4 teaspoon sea salt Celtic
- 1/4 teaspoon pepper
- 1/8 teaspoon cayenne pepper
- 3 avocados large ripe, cut in half, pits removed
- 1/2 cup Parmesan cheese or sharp cheddar, finely grated
- In a large bowl, combine the cream cheese, crab, tomatoes, scallions, salt, pepper and cayenne; mix until well combined.
- Cut the avocado in 1/2 and remove the pit. Fill the avocado with crab mixture, top with generous amounts of cheese.
- Place avocados on the bottom of an oval 6-quart slow cooker. Cook on low for 2 to 3 hours or until avocado is soft and cheese is melted.
