Pork Chops With Arugula Parmesan Mashed Potatoes
- 1 3/4 pounds potatoes Desiree, peeled, quartered
- 3 tablespoons butter
- 3/4 cup milk
- 2 1/3 cups arugula
- 1 1/2 ounces Parmesan grated
- 1 teaspoon lemon zest grated
- 1 tablespoon olive oil
- 4 pork chops
- tomato chutney to serve
- Place potatoes in a large saucepan; cover with water and bring to a boil. Cook for 15 mins, until tender; drain.
- Add butter and milk to potatoes and mash well. Add arugula, Parmesan and lemon zest. Season to taste and stir until combined. Set aside and keep warm.
- Meanwhile, heat oil in a large frying pan on medium-high. Cook pork chops for 4-5 mins each side, or until cooked as desired.
- Serve chops with Parmesan mashed potatoes and tomato chutney.
