Oat Pancakes With Bacon And Figs
- 1 cup self-rising flour
- 1 cup flour
- 2 cups rolled oats
- 2 tablespoons sugar
- 3 cups buttermilk
- 2 eggs
- crispy bacon to serve
- figs to serve
- maple syrup to serve
- Sift flours into a large bowl. Stir in oats and sugar. Whisk buttermilk and eggs in a medium bowl. Add to flour mixture, stirring to form a smooth batter. Cover and let stand for 30 mins.
- Spray a nonstick skillet with no stick cooking spray and heat on medium heat.
- For each pancake, pour 1/4 cup batter into pan. Cook, in batches, 1-2 mins until bubbles form on the surface. Turn over and cook the other side 1 min, until golden. Transfer to a plate. Cover and keep warm. Repeat with the remaining batter.
- Serve pancakes with bacon and figs, drizzled with maple syrup.
