Pork Chops With Mushroom And Pepper Sauce
- 4 pork chops
- 3 tablespoons flour
- 2 tablespoons sunflower oil
- 1 pound mushrooms cleaned and roughly chopped
- 2 onions peeled and diced
- 1 red pepper trimmed, deseeded and sliced
- 1 green pepper trimmed, deseeded and sliced
- 2/3 cup vegetable stock
- 2/3 cup whipping cream
- 1/4 pound gouda cheese grated
- 6 sprigs parsley finely chopped
- Preheat oven to 400u0b0F. Dredge pork chops with 2 tbsp flour. Heat oil in a frying pan and fry chops for 3 mins on each side, then set aside.
- For the sauce, add mushrooms to the pan and cook for 10 mins, adding onions and peppers after 4 mins. Season. Sprinkle with 1 tbsp flour, then add stock and cream. Bring to a boil, stirring, and simmer for 1 min.
- Arrange chops in a baking dish, top with sauce and sprinkle with grated cheese. Bake for 30 mins. Sprinkle with parsley to serve.
