Falafel

  1. Bring a large pot of water to a boil. Add fava beans and bring back to a boil. Reduce heat and simmer, uncovered, for 5 mins. Drain.
  2. In a food processor, combine fava beans, chickpeas, parsley, cumin, coriander, salt, baking soda, onion, flour and egg. Process until almost smooth. Shape level tablespoons of mixture into patties and arrange on a baking tray. Cover and chill for 30 mins.
  3. Heat vegetable oil in a wok. Working in batches, deep-fry falafels until browned. Drain on paper towels.
