Falafel
- 4 ounces fava beans dried, soaked overnight, drained, rinsed
- 4 1/2 ounces dried chickpeas soaked overnight, drained, rinsed
- 3 tablespoons flat leaf parsley leaves fresh, coarsely chopped
- 2 tablespoons ground cumin
- 2 tablespoons ground coriander
- 2 teaspoons salt
- 1 teaspoon baking soda
- 1 onion small, finely chopped
- 1 tablespoon all-purpose flour
- 1 egg
- vegetable oil for deep-frying
- Bring a large pot of water to a boil. Add fava beans and bring back to a boil. Reduce heat and simmer, uncovered, for 5 mins. Drain.
- In a food processor, combine fava beans, chickpeas, parsley, cumin, coriander, salt, baking soda, onion, flour and egg. Process until almost smooth. Shape level tablespoons of mixture into patties and arrange on a baking tray. Cover and chill for 30 mins.
- Heat vegetable oil in a wok. Working in batches, deep-fry falafels until browned. Drain on paper towels.
