Vodka Cream Pasta
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 garlic cloves minced
- 1 yellow onion medium, chopped
- 1 cup vodka
- 1 cup reduced sodium chicken broth
- 32 ounces crushed tomatoes
- 1/2 cup heavy cream
- 1 box penne rigate
- salt
- pepper
- Heat the oil and butter over a medium heat in the sauce pan. Add the onion and garlic and allow to saute for 3-5 minutes.
- Add the vodka and allow to cook down for about 3 minutes. Then, add chicken stock, tomatoes and cream. Allow it bubble then reduce to simmer. Season with salt and pepper.
- Add water to pot and bring to a boil. When boiling add pasta and allow to cook according to the box's directions.
- Right before the pasta is done take the sauce off the heat.
- Strain your pasta and add the sauce directly into the pot of penne and allow it set for a couple of minutes. Then you are ready to serve and enjoy!
