Party Chicken And Shrimp
- 1 lb. medium shrimp
- 3 whole large chicken breasts
- 4 Tbsp. butter
- 1 medium onion, diced
- 1/4 c. minced parsley
- 1 (8 oz.) can tomato sauce
- 1/3 c. Port wine
- 1/4 c. water
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. basil
- In 12-inch skillet, over medium heat in hot butter, cook onion until tender, stirring occasionally.
- Remove onion.
- In drippings, cook chicken breast halves until browned on both sides.
- Into skillet with chicken, measure 3 tablespoons minced parsley; stir in onion, tomato sauce, wine, water, salt, basil and pepper.
- Over high heat, heat to boiling.
- Reduce heat to low; cover and simmer 10 minutes.
- Add shrimp, cover and simmer 5 minutes.
- Skim off fat from liquid in skillet.
- Spoon onto platter.
- Sprinkle with remaining parsley.
- Makes 6 servings.
